Day 89: Vegan Waldorf Salad

Goal 82: The Cole Porter song ’You’re the Top‘ contains the lyric, “You’re the top, you’re a Waldorf Salad…”

I have been looking for an updated recipe for this old American old standard: The Waldorf Salad. I found a wonderful version at the Prevention website. Delicious!

Ingredients:
1 cup thinly sliced apples 
1/4 cup thinly sliced celery 
1/2 cup seedless green grapes 
1 1/2 tablespoons apple juice 
1 tablespoon lemon juice 
1 teaspoon extra-virgin olive oil 
1/2 teaspoon dijon mustard 
3 cups torn romaine lettuce 
1 head Belgian endive, leaves separated 
1 tablespoon coarsely chopped toasted walnuts

Alternative: For a more fruity salad, add 1/2 cup blueberries.

Directions:
1. In a medium bowl, combine the apples, celery and grapes.

2. In a small bowl, combine the apple juice, lemon juice, oil and mustard; mix well. Toss the apple mixture with 1 1/2 tablespoons of the dressing.

3. Place the romaine on a serving platter and arrange the endive leaves in a wheel on top of the romaine. Drizzle the greens with the remaining dressing. Place the apple mixture in the center of the platter and top with the walnuts. 

Note: To toast nuts, place them in a dry skillet over medium heat. Toast the nuts, shaking the pan often, for 3 to 5 minutes, or until fragrant and golden.

Day 79: Green Smoothie Matrix

Goal 82: I drink quite a few Green Smoothies each month which I create with ease using my my Vita-mix. Recently, I found a comprehensive blog posting by Chris Baker which detailed the many possible combination for this filling healthy drink. Read the entire post here. Below is the basic matrix from Chris’s formula. Enjoy! 

Green Smoothie Formula
3 handfuls of greens (see below for sample list of ones I enjoy)
1 handful of your choice of more greens or root, stalk of flower vegetables (see below for sample list of ones I enjoy)
1 or 2 tsp Ground Flax Seed
a few nuts if desired (any raw nut will do)
Water up to half the level of greens in the blender
2 to 4 fruit depending on personal taste or capacity of blender (see below for sample list of ones I enjoy)

Remember that variety here can be best. You do not have to use one green or one vegetable.

Sample Greens
Lettuce (any variety)
Cabbage (any variety)
Spinach (baby or mature)
Parsley
Bok Choy
Kale
Mustard Greens
Collard Greens
Turnip Greens
Premix Bags like ColeSlaw Mix, Baby Spring Mix.

Sample Root, Stalk and Flower Vegetables
Carrot
Celery
Green Onion
Broccoli
Cucumber (technically a fruit, but put it here)
Peppers (technically a fruit, but put it here)
Avocado (technically a fruit, but put it here)
Any others you would like to try. Savoriness or nutritional value is the key here.

Sample Fruits
Banana
Apple
Pear
Strawberry (3 or 4)
Orange (peeled and seeds removed)
Blueberry (1/2 to 1 cup)
Raspberry (1/2 to 1 cup)
Blackberry (1/2 to 1 cup)
Watermelon (not a whole one, but a cup or so worth)
Any other fruit you would like to try. Sweetness is the key here.

Day 27: Do you know a Great Vegan Recipe?

Goal 60is to collect 100 fantastic vegetarian or vegan recipes
Goal 82 is to eat 100% vegan for 6 months and I want some good meals during this time.

Day 11: Cold Root Soup

Goal 82: Root soup is something I’ve found I enjoy over the years and it is one of the winter holiday traditions at my parents. After studying a number of different recipes, I crafted my own version which I had for dinner this evening for the first time. Although I am biased, I believe this variant is quite good! So, tonight I’m posting my first vegetarian recipe, one that is fairly simple and requires no cooking. 

Cold Root Soup
3 cups fresh carrot juice
1 cup fresh parsnip juice
1 large avocado
handful of alfalfa sprouts cut into thirds
small sprig of parsley

1. Use a juicer to make the fresh carrot and parsnip juice.
2. Cut the avocado in half. Remove the seed and skin.
3. Place carrot juice, parsnip juice, and avocado in blender. Blend until creamy smooth.
4. Decorate the top of the soup with the sprouts and parsley.

This was meant to be served cold; however, if you have a Vita-Mix, you can blend it until warm as well. If you try this recipe. please let me know what you think. I thought it was fairly easy and delicious.
